Agromar, only use the Cantabrian coast anchovy, freshly caught in the spring, at which time it is at its optimum flavour. Those are cured and matured whole in salt barrels for 6 months, before being finally cleaned and filleted, to become the highly-valued Cantabrian Sea anchovies.
Semi preserved- Those tins must be stored in the fridge or consumed within a fortnight once kept at room temperature.
